Trains LIVE — 1-4-2023 — Happy New Year and welcome to 2023. Did you know that of the top five New Year’s resolutions made annually, three of them involve fitness, health, and a better diet? Our resolve regarding our resolutions fades quickly, however. In 2022, surveys indicate that within 30 days of Jan. 1, 22% of those making resolutions had been faithful to only a portion of their intent. Another 11% indicated they had already given up on their New Year’s pact. It’s time for some help. It’s time for Trains Live — Northern Pacific Slenderella Salad.

What does this have to do with railroads? Post-World War II, railroad passenger departments made greater efforts to attract passengers through associations. Example: in the late 1940s, women became fitness and weight conscience. Eating lighter was in. Women began to exercise in spas and gyms. In the dining car, menus were changed to include lighter fare, illustrating that the railroads were in step with what the traveling public wanted.

During this time the largest women’s spa chain was Slenderella International. The Northern Pacific Railway, in association with Slenderella, offered a menu item targeted at women — the Slenderella Salad.

Since 60% of our New Year’s resolutions involve health and fitness, we want to help by providing you with a railroad dining car recipe designed for better eating. Try the Northern Pacific Slenderella Salad.

Northern Pacific Slenderella Salad

What you’ll need:

fruit salad
Fresh, healthy, and delicious: the Northern Pacific Slenderella Salad. The railway included this on their dining car menu to offer women a lighter meal alternative.
  • lettuce leaves
  • a pear
  • a peach
  • an apple
  • an orange
  • green seedless grapes (halved)
  • Bing cherries (halved)
  • diced pineapple

Place the crisp lettuce leaves on a luncheon plate. Slice fresh pear, peach, and apple to match the shape of orange sections. Place these in an alternating, wagon-wheel pattern on the lettuce. Combine the grapes, cherries, and pineapple, place in center of plate. Serve Honey Dressing on the side.

Honey Dressing for fruit

  • 1 1/3 cup mayonnaise
  • ½ cup honey
  • paprika (to taste)

In a bowl, stir mayonnaise until smooth. Add honey and mix well. Sprinkle with paprika. Serve with fruit or salad.
